The term "gem" is generally used by numismatists to denote a coin that MS-65/PR-65 or higher.

What does MS-65/PR-65 mean? See my guide on coin grades!

Sometimes the lingo is used as follows:

MS-60                     "Typical"
MS-61 or MS-62    "Select"
MS-63                     "Choice"
MS-65 and higher    "Gem"

...these terms are used for the corresponding proof grades too. Generally the term "Gem" is used to describe higher end Mint State coins.
