Here is a very simple recipe that you can use in three different ways: for a side dish, for a hot or cold hors d'oeuvre, and for a grilled sandwich filling.
Start with a box of frozen spinach, thaw and drain it pretty thoroughly. In a microwave-proof dish (about 2 quarts is a good size, though a smaller one will work) combine a half a stick of butter or margarine ( go ahead, use the real butter) and a small (4 ounce(?) ) block of cream cheese. Zap the two dairy products until soft- maybe 15-20 seconds to start. Mix in the spinach and zap until hot.
Voila- a "spinach souffle" side dish that is creamy good and simple to make.
Now, take your leftovers and reheat them a little to get the creamy stuff thinned a little bit. Spread it hot on crackers or make cocktail sandwiches and serve them chilled.
