Turkish Coffee (Arabic and Greek also)

Hello dear reader! This is a guide from FreshCoffeeShop to help you make Turkish coffee the traditional way (also Greek and Arabic).

You will need Turkish coffee, a Turkish coffee maker (ibrik), water and a heating source.

First fill the traditional turkish coffee maker, called ibrik, cezve or "briki", with 3oz of water. Ibriks are made in different sizes and usually from 1-cup size to 5-cup size. You can find traditional copper or brass ibriks, or the newer stainless-steel ones. I personally prefer a brass ibrik or a high quality copper one.

After adding the water, add sugar to taste (if you like your Turkish coffee that way) and top it with a heaping teaspoon of finely ground coffee. Stir the coffee a bit. The coffee seals the narrow top creating an oven effect.

Put on LOW FIRE (you can also use your stove or even better the traditional HOVOLI, which uses sand to heat the coffee slower). As the coffee heats it will start forming a foam layer, on top, which looks like a ring. As soon as the crema-foam ring increases its width, and fills the top layer turn off the fire and lift the ibrik. Pour slowly into a small demitasse cup and it's ready for savoring .

Pay attention to the foaming. It is the skill part of the process. If you don't, your ibrik will become volcanic and deposit your Turkish coffee on your stove :-)

Serve along with a glass of fresh water and a small desert for your friends. The turkish delight desert is perfect for pairing!

Advanced: There is an advanced method of lifting and lowering the ibrik continuously while it starts boiling, to increase the amount of crema/foam. Just don't overdo it or you'll get bitter over-extracted coffee!

(If you want more cups just multiply dosage ie for 2 cups 6oz water 2 teaspoonfuls coffee)

Greek Coffee with Ouzo

This is a traditional coffee recipe of the Greek monks in the sacred "Agio Oros". You will need:

2-3 teaspoonfuls of greek coffee
2 teaspoons of sugar
1 teaspoon of "ouzo" (traditional strong Greek alcohol drink)
2*3oz cups water

After you prepare your coffee the usual way, add the Ouzo inside, and serve.

You can also combine greek coffee with koniak, honey or cardamon!
