Changing your motorcycle seat can be a necessity or just something you want to do. First off, decide what material you want your seat to be. Vinyl is cheaper, holds up well, comes in many colors. and usually looks good. The down side is that it will be hotter both against you and if left in the sun. Leather adds personality. It looks good, can be tooled or stamped to suit you, and is cooler. It is also more expensive. A good compromise is to get a leather top with vinyl on the sides.
A new seat can do many things. It can move you forward or back, up or down. If you are having to reach for your handlebars then a seat that moves you closer is the way to go. The opposite for the taller riders. Likewise if you are tippy toed trying to reach the ground a seat that lowers you will fit the bill. Before changing your handlebars or shocks just so you feel comfortable riding try chaning the seat first. It is the easiest way to move your position.
Now decide what material you want the "guts" of your seat made from. There is open cell foam which is softer, closed cell foam that is firmer. Remember, softer is not always better for a long ride. I've had seats that were as hard as if I was riding on the frame but were comfortable. This is a personal choice. Many companies now offer gel seats. These claim to evenly distribute you weight and reduce hot spots.
Next, do you want a backrest? Several seats come with or can accommodate one. Again this is a personal choice. Some models such as a softail sit you low enough that a backrest may not be necessary. Others such as a sportster have you sit on "top" of the bike instead of "in" it and you may be more comfortable with a backrest
There are many companies that make off the shelf seats that will do most of the above. The major companies are Mustang, Corbin, and Saddlemen. One company that will custom make your seat to your specs for a very reasonable cost is Bar Enterprises. Whoever you chose take your time and think about your riding habits and what is important to you. Comfort? Style? Price? Then try and find a happy medium between them all.
Most important of all... Ride Safe!
