Masala Chai “heavenly chai” Exotic Teas India + Free Recipe.
I feel I have been blessed with delicious masala chai, masala chai plays major roll in my life style and also life style of other who loves chai.
I love masala chai and in my family all loves masala chai, every one makes different masala chai in my family - I guess masala chai reflects mood and personality of person, but my most favorite one was masala tea from my mother later sister's and now my wife. Masala chai has very special place in my heart - I strongly understand nice masala chai only made by person who has beautiful heart, caring personality and lots of love to offer.
Though it is difficult to make nice masala chai, but time anyone makes masala chai (with special blend of unconditional love in chai, In India at home- mainly woman makes tea) - I am telling you it is so different, In morning, you will inhale aroma of masala chai in your bed and music of spiritual chanting, you walk up slowly and feel environments and just sit on sankheda swing and first sip..... Everything changes I feel like top of the world feelings are not comparable -it’s so holy your day is fabulous - superb - you feel, most happy, on this earth.
Masala chai is incomparable and I have tested so many different masala chai from different people, location, religion and country. If I am traveling, I like most, masala chai of Bombay, We called it mast masala tea of bhatt-nukkad, this special tea being made by very special person called Bhatt previously know as marvadi cook from Rajasthan northern part of India. One must try masala chai of Bhatt time you travel and visit India specially Bombay Mumbai.

In India, Garam masala chai- tea is very delicious and soothing and largly consumed by traders-who owns shops and business to the common man in India. Every small or big business meeting or social gathering or just discussion (most popular are crickets, politics, films) or gap shup - gossip, chai is key factor, chai is must for anything and everything. to offer chai was formality, now it is most popular custom to invite each other for chai, chai is first step towards introduction and later lunch and dinner -to have just chai is beginning of friendships and to have masala chai is sign of happiness’ and new happy beginning of any relation - in business or social. An offer of masala chai, you should know for sure that you have been treated royally, to refuse tea is not good sign, you should-must have half cup (again most popular way) 50 to 80 ml. and later you may invite them too.
Lots of people have tried to make masala chai of Bhatt but not able to make similar tea but most of the Bhatt chai are similar. In India masala chai has lots of milk with chai masala - spices like cloves, cinnamon, nutmeg, ginger, cardamom and pepper also green masala chai has green mint, fresh ginger slice, and green lemon- tea leaves with regular tea leaves plus lots of milk and sugar.

Masala chai:
Boil two cups of water for 1 minute
Add black tea leaves and boil it for 30-45 seconds
Add ready masala or add piece of dry ginger cardamom pods, crushed whole cloves small piece of cinnamon
Add hot milk 1 cup, boil it for another 30-45 seconds add sugar, honey or any sweetener as require.
Strain out the spices and serve with sweet or salt cookies.
Green masala chai:
Boil two cups of water for 1 minute.
Add black tea leaves and boil it for 20-30 seconds
Add chopped fresh green mint 3-4 leaves - add 1 lemon leaves (green chai) add 2-4 small leaves of tulsi holy basil add slice chopped ginger
Boil it for 40-50 seconds
Add sugar-honey or any sweetener as require.
add hot milk or drink as it is hot or add some water cool it down add ice - fresh yellow lemon and enjoy.
Don’t forget to Strain out the spices…!
CHAI MASALA:
Make CHAI MASALA Cooking Time: 10 mins. Small cup of masala good for 70-90 cups of tea or milk.
Ingredients
¼ cup cinnamon (dalchini), cut into small pieces
1/8 cup cloves (laung)
¼ cup black peppercorns
¼ cup cardamom (elaichi)
6 black cardamom (moti elaichi)
¼ cup mace (javantri), broken into pieces
½ nutmeg (jaiphal), grated
¼ cup ginger powder (soonth)
Method
1. Dry roast- at low heat- the cinnamon, cloves, black pepper, cardamom, and black cardamom for 7 to 8 minutes. Let, Cool completely.
2. Add the mace, nutmeg and ginger powder and grind to make a fine powder.
3. Store in an air-tight container.
4. Use as required making masala tea or milk.
