The FuriTech Gusto Grip East/West knife is a combination of cook's knife and chopper. This is a professional-quality high performance food prep knife that Rachel Ray helped design. It has a moulded rubber grip that is infused with an anti-bacterial compound.
It's called the East/West knife because it is a combination of a traditional French chef's knife and the Japanese Santoku. It has scallops on the side like a Santoku to keep food from sticking, but the front edge of the knife is curved rather than straight. This allows you to chop food in a rocking motion with the tip of the knife on the cutting board.
I was a little put off at first by the orange color on the handle, but now I like it. When I am busy, my food prep area gets a little crowded and a knife can get lost in all the stuff on the counter. With the orange handle I can spot the knife quickly and I don't have to worry about reaching for something and accidentely cutting myself.
The other neat thing is the handle design. It is fatter at the front rather than at the back like a traditional knife. This shape, plus the comfort no-slip grip is less tireing when I am working.
I now own and use the five inch and seven inch model and have also started using the Rachel Ray pairing knife and slicer. These knives are very good quality, keep a sharpe edge and are easy and comfortable to use.
