I'm writing as a guide for people to buying cookbooks that are published in both UK and US, in general.

In this case, I shall use Nigella Lawson's cookbooks, as hers are available in both versions and often sought in UK and US as well as other parts of the world.

As a person who loves to prepare dishes at home and have done so using both versions of Ms Lawson's books, I find that there are pros to each one.  Note that I say pros, because I think cons are also pros when you look at them positively.

In doing so, I found  distinct 'pros' (differences):

For the US version, the measurements for most recipes tend to be cups and spoons, which I really love and prefer, because it's really easy to use and less equipment to clutter on the kitchen table top.  Examples: 4 cups of flour, 2 tablespoons of cocoa powder.  On top of that, measurements in pounds and ounces are used mainly if it requires meat in the recipe.

In fact, last week I saw a rerun of Forever Summer on TV and caught Ms Lawson herself saying she prefers using the cup measurement for that particular dish she was preparing.  The UK version, meanwhile, uses mostly (metric) grams.  So don't forget to take out the kitchen scale when the recipe calls for it.

For recipes that requires usage of oven the US version will state in Fahrenheit (F) and the UK version will have Celcius (C) or Gas Mark number.  Some brand of ovens will only display one type of temperature scale, while others may have all three.

Don't let the 'pros' discourage you from using either version of the book as conversions are easily available.  At any rate, I usually supply a sheet of simple conversions together with the books for people who buys them from me as I know how important it is to ensure your dishes turn out as what you expect it to be..

So go on, get yourself acquainted with her recipes with minimal worries..All the best!
