Because of our weather in Canada, with
extreme cold at night
and sunny days. The maples produces
a fine and more sugary water.
these sugar shake are made to boil
the sap.
this is the way i remember getting the water from the maple trees.
In the month of March the sap will begin
to run, the first run is call amber, it a dark syrup
the second run is for me the best one.

and at the end of march comes the light syrup.
