Making Chocolate Lollipops and Coloring the Chocolate

I get a lot of questions asking how I made the characters so cute from the molds that I sell on Ebay.  I thought this simple guide might answer a lot of questions.  The mold of Big Bird shows one I made from the mold.  I will use this as an example. I always use white chocolate and then color it with candy colors to make the appropriate colors.  You can also buy chocolate that is already colored.  I then put the chocolate in a small plastic squeeze bottle that has a lid with a small opening to allow the chocolate out.  I then slowly squeeze it out in the areas that need it.  For example, I started with the pink and placed it in the lines where the pink should go and then let it dry.  Then I put the white circles in for the eyes and let dry.  Then I put the orange in the areas where it goes and if it overlaps the pink, it won't show.  Then I did all the yellow in a nice thin layer and let dry.  The reason you only put a thin layer of it is so you can still pour milk chocolate over the entire mold.  Remember: whatever isn't colored in will show the milk chocolate. With this mold, everything is already colored.  After you pour the milk chocolate over it, insert the lollipop stick and place in refrigerator to dry, approximately 15 minutes. Place a soft, clean towel on table and flip the mold over gently so the lollipops come out.  I then use black chocolate and place a dot for each eye. I find it is easier to do the eyes after the mold comes out.  Just remember, if you make a mistake, just drop it back into the chocolate and remelt it.  If your chocolate becomes to hard, just place it in the microwave for a few seconds to soften it up.
