TO MAKE ALMOND BUTTER THE ALMONDS WILL HOMOGENIZE BETTER IF ROASTED.YOU CAN TRY RAW ALMONDS BUT THE BUTTER WILL BE VERY DRY AND PASTY. ALMONDS ARE VERY EASY TO ROAST, ON A COOKIE SHEET WITH ALMONDS SINGLE LAYER( NOT PILED UP). SET OVEN TO 350 DEGREES AND ROAST FOR 15 TO 18 MINS. AFTER THE 15 MINUTE POINT THE ALMONDS ROAST VERY FAST AND ARE EASILY BURNED. THE AMOUNT OF TIME YOU LEAVE THEM IN AFTER 15 MINS WILL GREATLY AFFECT THE TASTE.
