- Wash your hands & rinse w/distilled white vinegar.Treat K-tea like any other food product.
- How to make the sweet tea~Boil water in stainless steal or glass pot,not aluminum. Bring desired amount of water to a boil, stir in sugar & let the sugar water boil for 5 min, stir.
- When the 5 min are up, remove sugar water from burner & add tea bags, stir.Steep tea 10/20 min remove tea bags.Let the sweet tea cool to room temp. (A culture placed in hot sweet tea will die)
- Pour the cooled sweet tea into a clear glass jar.
- Add the culture & the starter tea to the jar of sweet tea.Put a clean breathable cover on jar.securing the cover with a rubber band.
- Now you wait. let tea ferment in a dark room temp spot between 68-86 degrees. A dark cupboard works great.Let tea sit undisturbed, DO NOT STIR IT.
- Start tasting after 5-7 days, let it ferment until your desired taste. The longer you ferment, the more acidic it gets. Usually best around 8-10 days, although it can take up to 14-21 days.
- At the end of the fermentation period you will have the original culture & a new culture,Wash your hands as in step 1 remove the cultures from the K-tea w/hands,
- Save enough unstrained starter tea for each culture. To restart just repeat steps (2)-(6)Start 2 jars or store cultures in fridge w/starter tea
- Now strain the K-tea into a clean Jar.
- Keep K-tea in the fridge, you can start drinking the K-tea immediately. As the tea sits in the fridge it continues to"work"you may have to strain the slime strings again before drinking. Your body will tell you how much you need a day.
