My wonderful Mom originally taught me how to make thick, fluffy breakfast omellettes that almost melted in my mouth. It is so easy, once you know how.... Use as many eggs as you wish,, 3 eggs makes a good sized omelette. Simply break open each egg and separate the yokes from the eggs, putting the whites of the egg in a larger mixing/beating bowl and the yokes in a separate smaller bowl.... Break the yokes and stir the yokes together whith spoon or fork, adding a little salt and pepper to your liking. Now take the whites of the egg and continually beat them until they become real light and fluffy... Then you pour the mixed yokes right into the light, fluffy egg whites,,, stirring them together slightly with a large spoon... Then pour this into a heated and buttered fry pan or skillet. Cook until lightly bown on both sides -- and you have a wonderful breakfast. Now, in putting the ingredients together, you can be creative by adding cheese, sausage, green peppers and / or anything that might taste good,,, but I personally like them all by themselves with a cup of coffee.
