Like Guacamole? It's super easy to make and super easy to keep - just follow these tips.


Picking an Avocado

Next time you are in the grocery store - look for Haas Avocados (they are everywhere). Pick a couple that are either green, or dark but just soft to the touch. Avoid ones that are really soft.


Slice It Up

When the avocado is in that dark, just soft stage (either buy it from the store like that or wait for it to rippen to that stage) - you're ready to slice it up.

Lay the avocado lengthwise on a cutting board and cut into the avocado until the knife hits the knife inside..then just keep slicing all the way around the length of the avocaco (as in, cut so the knife goes right through the stem, splitting the avocado into two hemispheres. Then just pull it apart and you'll get one side with a nut, and one side that's empty.


Scoop it Out

Getting the nut out of the one side is a little tricky. One good way to do it is to hack into it with a knife blade then pull the nut out with the knife. Alternatively, you can just scoop it out with a spoon.

Once you have two clean halves of Avocado, scoop out the green stuff (hopefully its some color of green if your avocado is just ripe enough). Scoop it out into a mixing bowl.


Mix It Up

Take a fork and start mashing up the avacodo in that bowl. As you do that, take a table spoon or two of salsa (just the kind you buy at the store - about two tablespoons per avocado) and mix it in. Salt the bejeezus out of it...mix it up.


Freeze it.

Some folks say that adding lemon juice keeps your guacamole from turning brown....but there is a much better way.

Take your freshly made guacamole and using a table spoon, scoop out blobs of it into an ice cube tray, then freeze it. Once frozen, the blobs will come out just like ice cubes.

Toss a blob into the microwave with a frozen burrito or just about anything...or you can nuke it separately too.
