HOW TO BAKE WITHOUT BURNING IT
Most of this information will apply to more than just biscotti and at this time of the year (Christmas) I think we all are in a hurry to get our holiday baking done and not have disasters such as burnt bakery slowing us down.
I own a licensed bakery on and off eBay and so will share some of what I know about how to prevent burnt stuff coming out of the oven rather than the lovely baking you hoped to have.
- If you are setting your oven at the right temperature and it is still burning there are a number of things that could be going wrong.
No. 1 - the temperature gauge in your oven is not working right. To find out you need to buy an oven thermometer and turn the oven on to 350. Wait until it says it has preheated, open the oven and check the temperature on the thermometer. It is says 350 then your oven is working right - not too hot or cold.
If it is off at all, for example my kitchen oven at home is an oldie goldie and it runs hot by about 35 degrees so I always have to allow for that when baking.
If the oven is okay, then maybe your pans are too dark. So to remedy that just put foil on them.
Are you making your baking with an artificial sweetener? If you are, it means that the oven temp needs to be lowered a bit OR the time reduced because artificial sweeteners will burn more quickly than sugar.
If none of these things are happening then I suggest using a timer. Too many things can happen - the phone might ring, the baby needs changing and so forth. So use a timer.
For biscotti half way through the baking (you should do this anyway), flip all the pieces of biscotti over. Then finish the baking.
