The Manufacturing Process of Outa-Africa's Homemade Macadamia Nut Honey Nougat Candy Series From The Coach House
These Macadamia Nut Nougat treats are made in the age old French Montelimar Tradition.The Montrlimar Tradition insists that there must be a minimum of 28% Almonds Nuts, 16% Honey,and 2% pitstachio Nuts as part of the mixture.
We have adapted the recipe where we offer both Almond and Macadamia Nuts in our nougat.With a careful blending of the best and freshest ingredients and a curing process to ensure these nougat offerings are the best snacks possible.Our nougat contains 40% macadamia or Almond nuts and 15% honey.
Check out our delicious homemade macadamia nut honey nougat.These amazing offerings are genuinely handmade.The macadamia nuts are grown and harvested on the farm where the macadamia nut nougat is manufactured.The honey is harvested from the very same bees that pollinate the macadamia nut blossom.
The Macadamia Nuts are carefully selected by hand,before being roasted.After the first roasting a second selection is made by hand to ensure that only the very best macadamia nuts are used in the manufacture of the homemade macadamia nut nougats.Once the nuts have been roasted a second time there is again a selection.Any macadamia nuts that do not make the high standards required are removed.After this selection the nuts are cut up to smaller pieces in order to get a good cosistent distribution in the nougat and reheated in order to ensure that the roasting process is complete.
During the macadamia nut curing process,the other ingredients are being prepared in special copper pots .The local macadamia honey is heated to a "molten" state and two separate mixtures of mixtures of glucose,sugar and water are heated.At the same time the egg whites are beaten and made ready for the blending to commence.
The blending procedure only commences once all the separate mixtures are ready. The ingredients are added and mixed to get the required consistency.Once the right consistency has been reached the mixture is poured into setting trays.These setting trays have been lined with edible rice paper and after the mixture has been poured into the trays a top layer of edible rice paper is added and the nougat slab is left to cool.
The cooled slab is then removed from the cooling tray and put into a template where it is cut to the required size.The ready cut macadamia nut nougat pieces are then taken to the packaging tables.This is where the finished macadamia nut nougat is specially hand wrapped in a selection of wrappers.
