Guide to Cooking Fried Green Tomatoes Southern Style

Fried Green Tomatoes

This is my Grandmother's recipe and they were always delicious!!!

You will need the following ingredients:

2 large UNRIPE tomatoes, maybe a pound

1/3 cup cornmeal

1/4 teaspoon salt

Nonstick spray like PAM

Butter

I like coarse salt on mine and freshly ground black pepper.

Now,  thinly slice off the ends of the tomatoes,  and cut the tomato in half inch slices.

You will get 4 to 5 slices per tomato, set these aside.

Combine the cornmeal and salt on a dinner plate, and mix until thoroughly blended.

Dredge the tomato slices in the cornmeal mixture, pressing it into the cut surfaces of the tomato to create a thick coating (IMPORTANT)

Place a large skillet (IRON is the best) over medium heat for several minutes, spray the hot pan with PAM or any non stick spray, and melt in a little butter.

After a few seconds, swirl and tilt the skillet to distribute the butter, then add the coated tomatoes.

Fry the tomatoes on each side for a few minutes, until crisp and golden.  You may need to add more butter at some point to keep the coated tomatoes from sticking to the skillet.

After you are satisfied to the crispness and color, remove the tomatoes from the skillet and transfer to a wire rack over a tray to cool. This is also important, for it will retain the crispy texture.

Now, I know you are ready to eat these, but wait at least 3 minutes for the Fried Green Tomatoes to cool.  The insides of the tomatoes will have become VERY HOT and will need to cool down a little.

Serve these warm and with coarse salt, black pepper.

You can adjust this recipe, but this will yield 2 to 3 servings (2 to 3 slices per serving).
