SHRIMP JAMBALAYA
1 slice of bacon, cut into small pieces
1 small onion, diced
1 clove garlic, minced
1 small green pepper, diced
1 ½ c. tomato sauce
1 c. smoked ham, diced
1 lb. Raw shrimp, peeled and deveined
1 Tbsp. Creole seasoning
4 c. water
1 c. rice
Cook bacon in pan for 2 minutes. Add onion, garlic, and pepper. Saute until transparent. Add tomato sauce, ham, and shrimp. Simmer with seasoning. Cook 5 minutes. Add water and rice. Simmer until rice is tender, about 30 minutes. Extra cayenne pepper may be added.
