• Definition:  Gelato is a type of ice cream that originated in Italy.  It is denser and more icy than traditional American ice cream as it is made with less air and milk rather than cream.
• Variety:    Gelato comes in a variety of flavors and is known for the extensive ice cream flavors made with fruit and nuts.  
• Ice Cream Shop:  Gelato shops are called Gelaterias in Italy.  
• Recipe:  Gelato is made with milk, soy or water.  This allows for great non-dairy desserts that will help your clients with dietary needs. 
• Temperature:  Gelato is served 10-15 degrees higher.  This makes it melt in your mouth faster. 
• Fat:  Because gelato is not made with cream, it has significantly less fat.
