Eggplant Parmesan - A Quick and Easy Basic Recipe!

Eggplant Parmesan


This is my quick and easy method of making Eggplant Parmesan! I make this entire dish in less than an hour, by using the previous day's leftover breaded eggplants! This eggplant parmesan recipe may be suitable for vegetarians as there is no meat in this dish, although you can also make a tasty variation of the recipe by adding fried sausage, as noted below.

Ingredients:

  • Pasta Sauce
  • Breaded Eggplant (already fried & cooked)
  • Mozzarella Cheese
  • (optional) fried sausage, crumbled up (loose flavored sausage)

For my demonstration below, I made this recipe with just the three main ingredients.


1. Spread a thin layer of sauce at the bottom of your baking dish. I used a chunky Italian "Garden Combination" sauce that had pieces of vegetables like zucchini and mushrooms.

 


2. Place a layer of breaded eggplant over the sauce. (Optional: If you are using sausage in your recipe, crumble some sausage over the eggplants now.)

 


3. Sprinkle a layer of mozzarella cheese over the eggplant.

 


4. Spoon or "dot" some additional sauce over the cheese. If you enjoy lots of sauce, you may want to spread a thin layer before adding the cheese. Otherwise, just drop a few spoons here and there over the cheese, depending on your taste.

 


5. Add a 2nd layer of breaded eggplants (shown below) and spread a thin layer of sauce on top. (Optional: Sprinkle some crumbled sausage over the eggplants, if desired.)

 


6. Lastly, sprinkle a layer of mozzarella cheese on top of everything. Cover with lid or aluminum foil.

 


7. Bake at 350 degrees for 30 minutes. Uncover and bake an additional 15 minutes to brown the top. (You can also leave in the oven and just broil the top the last few minutes.) Remove from oven and let cool slightly to firm up (10 or 15 minutes).

 


8. Cut into squares and serve. Note this recipe uses 2 layers of breaded eggplant, but if you have enough, you can add a 3rd layer as well! It is actually best for cutting and serving purposes if you have 3 layers. (So be sure not to gobble up too many Breaded Eggplants if possible!)

 

 


I hope my guide has proved useful in making your own Eggplant Parmesan!  It is really easy to make and there are a lot of variations and different recipes you can try. Some even use sliced up boiled eggs in one of the layers. My basic recipe is geared toward the beginning cook- or those who want to whip up a quick meal in under an hour!
