Ingredients:
- Package of chicken breast strips
- 1 stalk celery, chopped
- 1 onion, chopped
- 4 T shortening or oil
- 2 cups uncooked rice, washed
- 4 cups water and 4 cubes Chicken bullion or 2 cans chicken broth
- Tony Chachere's Creole Seasoning
Directions:
- Brown chicken, onion and celery in shortening in a cast iron dutch oven.
- Shake Tony's over chicken. Start out with 4 or 5 shakes and season to taste after adding broth.
- Add rice and chiken broth or bullion and water. Taste. If broth is saltly enough for you, you've added enough Tony's. If not, add a few more shakes.
- Cook on medium heat for 30 minutes or until rice is done.
Makes 6 servings. Serve with green salad or green beans and cornbread.
