Direct Method: When using a charcoal grill,spread hot coals in a single solid layer that fills the charcoal grate.Place food on the cooking grate directly over the hot coals.Place the lid on the grill,leaving all vents open,and grill as directed by your recipe,turnign the food once halfway through the cooking time.When using a gas grill,turn all burners to HIGH,and preheat 10 to 15 minutes to bring the grill to 500 -550 F.Then adjust the controls as the recipe directs (use for preheating and searing).
Indirect Method: When using a charcoal grill,pile hot briquettes as close as possible to the outside edges of the barbecue(use fuel holders if you have them).Place a foil drip pan on the charcoal grate between the coals.Arrange food in the center of the cooking grate and grill as directed with the lid on and vents open.If using a gas grill,follow the directions in you owner's manual.With most,arrange food in the center of the cooking grate,place the lid on the grill and set the burners to MEDIUM (turn the center OFF on a three-burner grill).
