Cookie Recipes For Christmas COOKIE Exchange Or Anytime
Don't you love Christmas cookie exchanges. I have one every year. Invite 12 friends ( preferably those that are good cooks!) Have them bring 3 or 4 dozen homemade cookies. Each participant takes 3 or 4 of each cookie & when you are done you have 3 or 4 dozen assorted homemade cookies. I put mine on a pretty Christmas tray & take them to the post office for the clerks. You can keep them & have them for Christmas dinner, or make trays for neighbors.
CHRISTMAS SNOWBALLS ***COOKIES***
2 c. flour
1/2 tsp. salt
Mix and set aside above ingredients. Blend:
3/4 c. butter
1/2 c. sugar
2 tsp. vanilla
Beat in 1 egg. Stir in dry ingredients. Add:
1 (8 oz.) pkg. semi sweet chocolate bits and if
you'd like 1 c. chopped nuts
Shape in 1" balls. Bake 15 to 20 minutes at 350 degrees on an ungreased cookie sheet. Cool and roll in powdered sugar. These freeze well.
CHERRY SURPRISES
These are easy, as you start with a prepackaged cookie mix:
1pkg Duncan Hines / any Brand-Sugar Cookie Mix
36-42 candied cherries
1/2 cup semisweet chocolate chips & 1tsp shortening or chocolate melting wafers

Preheat Oven to 375 & spray or grease cookie sheets

Prepare cookie mix according to instructions. Shape a thin layer of dough around each cherry. Place 2" apart on cookie sheet. Bake at 375 degrees for about 8 min. or until set, but not browned. Cool one minute on cookie sheet. Remove & cool on wire rack.
- Melt choc chips with shortening in microwave or melt chocolate wafers in microwave & drizzle over top of cookies. Allow drizzle to set before storing. Layer between wax paper in airtight container.
Chocolate Raspberry Thumbprints
These are very festive cookies & all ages will love them with their mini M&M's. You will need:
1/2 cup softened butter
1/2 cup sugar
1/2 cup firmly packed lt brown sugar
1 large egg
1tsp. vanilla
2 cups all purpose flour
1/2 tsp. baking powder
1+3/4 cups mini baking M&M's
1/2 cup raspberry jam
Powdered Sugar
How To:
In large microwave safe bowl melt butter in microwave, add sugars & mix well. Stit in egg and vanilla. In a medium bowl combine flour, baking powder,then blend it into the butter mixture. Stir in 1+ 1/4 cups of the mini M&M's & reserve 1/2 cup of them. Refrigerate dough for one hour. Now preheat oven to 350 degrees& Lightly grease cookie sheets. Roll refrigerated dough into 1" balls and place about 2" apart on cookie sheet. Make an indentation in the center of each ball with your thumb. Bake 8-10 minutes. Remove from oven & redent if needed. Remove from sheet to wire cooling rack. Lightly dust the warm cookies with powdered sugar; fill each indentation with about 1/2 tsp. raspberry jam. Sprinkle remaining 1/ 2 cup of mini M&M's on top. Dust once again with powdered sugar. Store in airtight container. Makes approx. 48 cookies.
Serve your cookies on decorative trays, Christmas plates or pedestal cake plates.
