These are perhaps the best knives available to the general public.  I sold these in college 30 years ago and my demonstration set is still sharp- or at least it was about four years ago when my EX-wife confiscated this set in my divorce settlement.  She wanted the knives but didn't even mention my retirement.  I am writing this review for one reason:  PLEASE SHARPEN THESE KNIVES PROPERY!!!!.  Send them back to the company and they will sharpen them for you for postage only.  Broken knives they will replace for 1/2 price with a new knife if they haven't changed the policy.  DEFECTIVE KNIVES ARE REPLACED FREE.  You can sharpen the DD edge; however, DO NOT USE A GRINDER OR STONE ON THE DD EDGE OR EVEN THE STRAIGHT EDGES.  USE THE SHARPENER SUPPLIED OR--- USE A BUFFING WHEEL.  USING A BUFFING WHEEL WILL SHINE THE KNIVES AND GIVE YOU A RAZOR SHARP EDGE.  DULLER KNIVES WILL REQUIRE MORE BUFFING, BUT WILL EVENTUALLY BECOME RAZOR SHARP.  USE A BUFFING COMPOUND FOR STAINLESS STEEL OR FOR HEAVY CUTTING IF THE KNIFE IS QUITE DULL.  WHEN BUFFING THE DD EDGE BUFF THE BACK OF THE EDGE AND THEN TOUCH UP THE DD GROUND FRONT EDGE.  WATCH THAT THE BUFFING WHEEL DOES NOT CATCH THE BACK OF THE KNIFE OR IT COULD BE THROWN FROM YOUR HAND AND YOU COULD BE INJURED SERIOUISLY.  AS YOU NEAR THE TIP OF THE KNIFE OR ON NARROW KNIVES, TILT THE KNIFE UP SO THE EDGE IS PARALLEL TO THE EDGE OF THE BLADE.  TRY TO KEEP THE KNIFE EDGE AT ABOUT 15 DEGREES OR LESS WITH THE EDGE OF THE BUFFING WHEEL.  PRACTICE ON SOME CHEAP KNIVES FIRST AND SEE THAT YOU CAN EASILY PUT A RAZOR EDGE ON A KNIFE.

PLEASE DO NOT CONTINUE TO RUIN THESE FINE KNIVES BY TRYING TO SHARPEN THEM WITH A GRINDER BY HAND OR EVEN A PROFESSIONAL SHARPENER, USE THE FACTORY OR A BUFFER.
