What can you dip in the chocolate fountain? Almost anything!! From strawberries to marshmallows, cream puffs, rice krispie squares, bananas, cookies, and fudge – just to name a few. But stay away from anything that is crumbly (cake), too juicy (watermelon) or too small (peanuts) as these could ruin the smooth flow of chocolate.

You will want to delegate someone to watch over the fountain for the course of the event. Even though the chocolate fountain is extremely easy to set-up and operate, if left unattended it can get messy as people dip into it. Whomever you delegate needs to ensure that there is enough chocolate in the fountain at all times and to watch that people do not "double dip" (and they can keep the area looking neat, tidy and re-stocked).
The quality of the chocolate is the most important part of a “chocolate fountain”, so don't skimp here!! Not just any type of chocolate is suitable to run in a chocolate fountain. You want to make sure that you have couverture chocolate, chocolate which has a higher percentage of cocoa butter (minimum of 34%). Some people have had success using “regular” chocolate (low in cocoa butter) but that must be supplemented with vegetable oil; which will certainly affect the taste of the chocolate!

Here are a few “rules of thumb” to keep in mind while planning your event:
1 lb. of chocolate will feed up to 10 people (i.e. 20 lbs of chocolate will feed up to 200 guests – but we always suggest having extra on hand just in case!)
If you are not using couverture chocolate (34% cocoa butter) in your chocolate fountain than you must add ½ cup of oil per 5 lbs. of chocolate to ensure proper flow.
Never allow any water to come in contact with the chocolate! This will cause the chocolate to “bloom”. Ensure that all food items and utensils are thoroughly dry before dipping.
If coloring your white chocolate you must use powder or gel food coloring (never water based!).
Be sure to ask your wedding venue in advance about bringing in the chocolate fountain (and dipping items). Many have strict rules regarding allowing “outside” food items.
