Both of the Anna Griffin Videos Elegant Card Crafting and Elegant Scrapbooking are excellent instructional videos.  Anna presents these in a very simple and concise demonstration.  You can either use the papers she recommends or use any of your own embellishments and papers.  Each video shows 6-7 different techniques and projects from paper pleating to simple corner mitering, rubber stamping, and safe use of a craft knife.
